Efo Riro- Spinach Stew

This portion serves 4


500g of frozen Spinach
1 tin of Plum tomatoes or Fresh tomatoes
1 bell pepper
1 scotch bonnet
1 onion
A handful dry crayfish
A handful of stock fish
A handful of locust beans
Salt to taste
2 teaspoons of all purpose seasoning
2 teaspoons of flavour enhancer
1 stock cube
100g of palm oil
Assorted meat
Crab meat


Heat the palm oil for about 10 minutes on low heat

Blend the peppers really roughly and pour into the palm oil

Leave to fry for 5 minutes, and then add all the seasonings

Now add the stock cube, locust beans and crayfish. Stir and leave to fry on low heat for 15 minutes

The consistency should be nice and rough as per the below picture..!!

I'll be using some assorted meat and crabs

I added some hot water to the spinach to defrost it.

                                                        Add the meat and crab

I also managed to get some crab meat out of the crab; its super tasty :-)

Leave again to steam for about 3 minutes; and remember on low heat.

Add the spinach in pieces and stir.

All done now, tastes yummmy..
